Characterised by a sweet and intense taste, green anise seeds are used to flavour fruit
and sweets, as well as in the production of spirits. They create a pleasant flavour when
added to beef or soft cheese and are often used with other spices to make hot herbal teas.
Green anise is an annual herbaceous plant belonging to the same family as that of fennel and dill, namely the Apiaceae. The correct name of these dry indehiscent fruits containing a single seed is “achenes”. The seeds are small, striped and greenish in colour.
