Characterised by a mildly spicy flavour, Ceylon cinnamon is considered to be the most
exclusive and expensive in its category. It blends well with apples, chillies and chocolate, and is often used to flavour syrups, sauces, creams and milk drinks.
Cinnamomum Zeylanicum is an evergreen plant which is native to Sri Lanka and
belongs to the Lauraceae family. Unlike Cassia cinnamon, real cinnamon is very thin,
which makes it fragile and easy to break.
