Strong paprika

Unlike the sweet version, strong paprika is obtained from the dried powder of sweet
peppers and chillies together with the seeds. It enhances the taste of goulash and many
Eastern European dishes, particularly meat sauces. It is also eaten with fresh cheese,
cream, fish, tomato, onions and avocado, as well as being part of many spice mixes.
The paprika plant is a perennial shrub native to South America. The biggest European producers are Hungary and Spain. It is obtained by grinding the seeds and the pulp of
different varieties of Capsicum annuum: depending on the colour and degree of spiciness,
different types of paprika can be obtained.
