Cubeb pepper
Since it has a low concentration of piperine, Cubeb pepper has a sweetish taste with a
hint of myrtle. Its pungent aroma is due to the cubebine, a characteristic substance of this plant that is capable of adding a strong flavour especially to game dishes.
The Cubeb pepper plant is an evergreen climber. It is not very common in Europe,
however it is widely spread both in Indonesia, where it is used as an ingredient in various masala (mixtures of spices) dishes, and in Morocco, where it is mainly used in pastry-making.
