Thanks to the long smoking process which uses beech wood, the classic black pepper acquires a more spicy aroma. Its intense perfume, ideal for injecting a strong flavour into every dish, makes it perfect for red meat and steaks.
The pepper plant is native to South India, but is cultivated in almost all tropical countries. It belongs to the Piperaceae family of plants. When drying in the sun, it turns black: the pulp breaks and ferments, while the wheat dehydrates and darkens until completely black.
