Pumpkin is a vegetable that can be eaten in several ways: baked, steamed, roasted or stewed. Like carrots, pumpkins are rich in beta-carotene and have a very sweet taste which makes them perfect for both savoury recipes (such as soups, risotto, gnocchi and
bread) and sweet recipes (such as cakes and biscuits).
The term “pumpkin” refers to the fruits of various plants belonging to the Cucurbitaceae family. The term “Cucurbita maxima” means the real pumpkin, which is yellow-orange and has a sweet flavour. Both the pumpkin pulp and the seeds are used. Pumpkin seeds have
a flattened and oblong shape and are dark green.
