Cumin can be ground or the whole seeds may be used. Thanks to its bitter taste and lemon scent, it is used to make many Mexican mixtures such as guacamole, or Indian ones such as curry. It is perfect for flavouring cheese or marinating chicken, turkey and
pork.
Cumin seeds originate from Syria and Egypt. They are similar to those of fennel and anise, but they are smaller, light in colour and veined. They are not to be confused with
“meadow cumin” – kummel or caraway, which has a different aroma and shape.
