The leaves of thyme are small and oval, and their colour varies from green to silvergrey. With a pungent and slightly sweet aroma, thyme is suitable for dishes which require a long cooking time, such as soups or stews. It can be combined with a variety of
vegetable and bread-based preparations, but also with cheese and omelettes.
Thyme is an aromatic, perennial and evergreen plant belonging to the Lamiaceae family. In Italy, it is a rare species and can only be found in the North-West on the Tyrrhenian side.
