If black pepper stands out for being the spiciest in its category and white pepper the most delicate, green pepper is considered the most aromatic and herbaceous. In the kitchen, it blends beautifully with other spices such as nutmeg and juniper berries.
Pepper is a plant native to southern India, but is cultivated in most tropical countries. It belongs to the Piperaceae family of plants. Unlike white pepper, green pepper is produced from dehydrated unripe fruit: by storing it in salted water, it retains its green colour.
