Allspice tastes like pepper and smells like a combination of cloves, cinnamon and nutmeg. Its berries are picked while they are still immature and are left to dry in the air, giving them a pungent and aromatic smell, which is perfect for flavouring sausages, stews and vegetable soups.
In Italy it is known as “Jamaican pepper”, while its English name reflects the fact that it recalls the taste of black pepper, cloves, cinnamon and nutmeg. Used in Caribbean cuisine, it is still little known in Europe, where it is commercially available mixed with other spices.
