This special paprika owes its characteristic smell to the smoking process. It is made from dried powdered peppers and sweet chilli peppers. It has a delicate and aromatic taste, which makes it ideal for seasoning and flavouring soups, stews, rice and meat dishes.
The plant is a perennial shrub which is native to South America. The largest European producers of paprika are Hungary and Spain. It is obtained by grinding the seeds and pulp from different varieties of Caspicum annuum: different types of paprika can be obtained depending on colour and degree of spiciness.
